After serving Oxford for 18 years, the Burgundy Room<\/strong> locked its doors for the last time. The bar will reopen as The Summit<\/strong>, a lodge themed bar that features a massive White Oak bar top, under the same management.<\/span><\/p>\n

Owner Jim Bulian<\/strong> talked with us regarding what inspired the change and how the process has gone.<\/span><\/p>\n

\u201cBurgundy Room opened 18 years ago,\u201d said Bulian. \u201cIf we were to upgrade it, there wouldn\u2019t be much that we could do to make it look different.\u201d<\/span><\/p>\n

\"IMG_7510<\/a>So, he set out to redesign the space above Old Venice<\/strong>, starting with removing as many rough edges as he could.<\/span><\/p>\n

\u201cIt\u2019s going to be a lot cleaner,\u201d said Bulian. \u201cWe use to have the sound system exposed and you could see the DVR was up high on a column. There were TV cables hanging, we\u2019ve got all that centralized in an office now. It\u2019s going to look more contemporary.\u201d<\/span><\/p>\n

Bulian\u2019s Business partner David Buescher<\/strong> suggested they hire a designer, though Bulian was initially set on handling that aspect himself.<\/span><\/p>\n

\u201cI found someone locally, Beth Mckey,\u201d said Bulian. \u201cShe was actually one of the first five people we hired when Old Venice first opened. She moved off and got married after college before coming back to Oxford. She lived [in Seattle], so she had that ideal.\u201d<\/span><\/p>\n

Aside from bringing \u201ca lot of great ideas to the table,\u201d her son also now works at Old Venice.<\/span><\/p>\n

\u201cIt\u2019s our first ever generational hire we\u2019ve had, so that\u2019s pretty cool,\u201d said Bulian.<\/span><\/p>\n

With the redesign almost over, there\u2019s no doubt in Bulian\u2019s mind as to whether he made the right choice.<\/span><\/p>\n

\u201cI\u2019m so glad that I chose to bring her on,\u201d said Bulian. \u201cIt wouldn\u2019t be half as awesome as it is now. She really dug down deep and came up with a lot of great ideas.\u201d<\/span><\/p>\n

\"IMG_7503<\/a>One of the bigger ideas they pulled together was lining the wall of the entryway with aspen trees.<\/span><\/p>\n

\u201cWe\u2019re going to have an aspen tree wall,\u201d said Bulian. \u201cWe\u2019re going to anchor them from the ceiling and line the whole wall.\u201d<\/span><\/p>\n

The Balcony that many know so well will also be undergoing a slight change.<\/span><\/p>\n

\u201cIt\u2019s going to look like a backyard,\u201d said Bulian. \u201cI\u2019m putting down AstroTurf.\u201d<\/span><\/p>\n

As well as updating the walls and floor, The Summit will be getting an update to the ceiling.<\/span><\/p>\n

\u201cWe exposed the rafters,\u201d said Bulian. \u201cWhen we did that we found out that they were still charred from the Civil War when the building was burned down. They asked if I wanted to paint over it\u2026but you can\u2019t do that. That\u2019s part of the story.\u201d<\/span><\/p>\n

The ceiling above the rafters was sprayed with insulation foam and will be painted blue to mimic the sky.<\/span><\/p>\n

With all the changes being made, Bulian assures that his loyal customers will still be welcome and that a few of their specials will return as well.<\/span><\/p>\n

\u201cWe\u2019re definitely gonna keep the \u2018Tini Tuesdays, Whiskey Wednesdays, Ladies Night,\u201d said Bulian. \u201cWe\u2019re talking about doing a $10 bottomless Mimosa and Bloody Mary.\u201d<\/span><\/p>\n

While they will be keeping the The Horn of Enchantment<\/strong>, The Summit will also debut the Shotski. Bulian was polite enough to explain exactly what that will be.<\/span><\/p>\n

\u201cIt\u2019s an actual ski that has four shots on it,\u201d said Bulian. \u201cSo you and your friends take it at the same time.\u201d<\/span><\/p>\n

While the look has changed and the name is different, it was made clear that one aspect had remained exactly the same.<\/span><\/p>\n
