(And, yes, as a great lover of puns, you better believe I was singing as I canned: <em>\u201cWe are the Yokna Bottoms Food Preservation Society&#8230;\u201d<\/em>)<\/span><\/p>\n<p><span style=\"font-size: 14pt;\"><a href=\"https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/08\/Yokna2.jpg\"><img data-recalc-dims=\"1\" decoding=\"async\" width=\"500\" height=\"691\" class=\"alignright size-full wp-image-15393\" src=\"https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/08\/Yokna2.jpg?resize=500%2C691\" alt=\"Yokna2\" srcset=\"https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/08\/Yokna2.jpg?w=500&amp;ssl=1 500w, https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/08\/Yokna2.jpg?resize=217%2C300&amp;ssl=1 217w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a>Home canning might be hip right now (think hipsters trying to ironically out pickle each other), but history shows that the revival of the practice is often fueled by necessity. For example, the sale of home canning supplies surged in 2009 as economic fears became all too real. During World War II, American propaganda urged Victory Gardeners to \u201cCan All You Can,\u201d making self-sufficiency an act of patriotism. <\/span><\/p>\n<p><span style=\"text-decoration: underline;\"><strong><span style=\"font-size: 14pt;\">Home canning <\/span><\/strong><\/span><\/p>\n<ul>\n<li><span style=\"font-size: 14pt;\">Makes good use of fresh, in-season fruits and veggies<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Is economical since produce is at its cheapest when it\u2019s in-season<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Reduces waste by reusing and recycling glass jars and saving extra food from ending up in the compost bin or worse, the trash can<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Connects us to food memories and tradition<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Just plain tastes better than commercial canned products<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">Supports local growers when fruits and veggies are purchased at farmers markets<\/span><\/li>\n<li><span style=\"font-size: 14pt;\">This old-fashioned form of food preservation can be quite intimidating\u2014nobody wants botulism, right? The fear of accidentally poisoning my family gave me pause but after lots of research I decided to have a go at it. Adding to my motivation: limited freezer space and killer deals at the Midtown Market on local peaches and apples. I decided to make peach jam and apple butter. Jams, jellies, and pickles are great starter projects since these high-acid foods can be safely preserved with a simple water bath.
