And in the spirit of Haley Barbour\u2019s now defunct Let\u2019s Go Walkin\u2019, Mississippi! campaign, please follow the consumption of fried okra with a long, brisk walk.<\/span><\/em><\/p>\n<p><span style=\"font-size: 14pt;\">We\u2019ve all been told that fried foods are bad for us but we\u2019re also hip to the fact that crunchy, golden fried crust is delicious especially when it encases one of the South\u2019s most beloved\/maligned vegetables: Okra.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\"><a href=\"https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/07\/OkraTall.jpg\"><img data-recalc-dims=\"1\" decoding=\"async\" width=\"506\" height=\"1024\" class=\"alignright size-large wp-image-15000\" src=\"https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/07\/OkraTall.jpg?resize=506%2C1024\" alt=\"OkraTall\" srcset=\"https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/07\/OkraTall.jpg?resize=506%2C1024&amp;ssl=1 506w, https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/07\/OkraTall.jpg?resize=148%2C300&amp;ssl=1 148w, https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/07\/OkraTall.jpg?w=600&amp;ssl=1 600w\" sizes=\"(max-width: 506px) 100vw, 506px\" \/><\/a>Okra\u2014the heat loving relative of cotton, hibiscus, and cocoa\u2014is a Deep South delicacy that also features prominently in Indian, Caribbean, and Middle Eastern cuisine and is prized for its soothing medicinal properties in Ayurvedic medicine.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">Down here, we tend to think of okra less as medicine and more as something to envelope in crust, another popular Southern food. In addition to frying, we stew\u00a0it, pickle it, and gumbo it (yes, I just made gumbo a verb.) I\u2019ve also heard that some more progressive Southerners are grilling it these days.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">For Sunday dinner, I had a pot of peas on the stove and some eggplant roasting in the oven when I remembered the pound or so of okra in the fridge. I kind of wanted to stew it with tomatoes but deep down I really wanted to fry it.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">In times past, frying okra has been a little melodramatic, requiring lots of bowls, cutting, time, labor and I always made a mess of the kitchen. I needed to keep things simple and come up with a quick recipe that didn\u2019t call for eggs because I didn\u2019t have any and I feared my marriage would not survive another request to run to the store. Here\u2019s the recipe I came up with. I left the okra whole and created a thick, crunchy jalapeno and Tabasco spiked crust. \u00a0<\/span><\/p>\n<p><span style=\"text-decoration: underline; font-size: 18pt;\"><strong>Betsy\u2019s One-Bowl Deconstructed Jalapeno Fried Okra<\/strong><\/span><\/p>\n<p><span style=\"font-size: 14pt;\"><a href=\"https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/07\/Okra1.jpg\"><img data-recalc-dims=\"1\" decoding=\"async\" width=\"600\" height=\"800\" class=\"alignright size-full wp-image-14998\" src=\"https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/07\/Okra1.jpg?resize=600%2C800\" alt=\"Okra1\" srcset=\"https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/07\/Okra1.jpg?w=600&amp;ssl=1 600w, https:\/\/i0.wp.com\/www.thelocalvoice.net\/oxford\/wp-content\/uploads\/2014\/07\/Okra1.jpg?resize=225%2C300&amp;ssl=1 225w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a>1\u00bd lb. Fresh okra, whole<\/span><br \/>\n<span style=\"font-size: 14pt;\">3 Jalapeno peppers, sliced into rings<\/span><br \/>\n<span style=\"font-size: 14pt;\">Buttermilk, about \u2153 cup<\/span><br \/>\n<span style=\"font-size: 14pt;\">Flour, about \u2153 cup<\/span><br \/>\n<span style=\"font-size: 14pt;\">Non-GMO Cornstarch, about 3 TBS.<\/span><br \/>\n<span style=\"font-size: 14pt;\">Grit Girl Cornmeal, about \u2153 cup<\/span><br \/>\n<span style=\"font-size: 14pt;\">Salt &amp; Pepper<\/span><br \/>\n<span style=\"font-size: 14pt;\">Tabasco Sauce<\/span><br \/>\n<span style=\"font-size: 14pt;\">Oil<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">Clean okra, pat dry, and trim only the top tough ends. Put okra and jalapeno slices in a big bowl. Pour just enough buttermilk to coat the okra and peppers, add a little more milk if you want a thicker crust. Once coated with buttermilk, season with salt, pepper, and Tabasco, and begin adding enough flour, cornmeal, and a little cornstarch to create what looks like cornbread batter. Keep batter thick so it will cling easily to the okra. This is going to look weird\u2014kind of like a batch of okra infused cornbread\u2014but please push on because it will be delicious.<\/span><\/p>\n<p><span style=\"font-size: 14pt;\">Get your heaviest bottomed skillet hot and add about a quarter inch of oil. Drop coated okra and peppers into hot oil. Drop extra batter into hot oil alongside the okra\u2014these okra-less crust bites are what makes this \u201cdeconstructed.\u201d Also, do not worry if some of your crust falls off in the skillet. Just fry it all until deep golden brown and pile crust and okra up on a big platter lined with paper towels to drain.
