{"id":115248,"date":"2021-11-01T10:17:25","date_gmt":"2021-11-01T15:17:25","guid":{"rendered":"http:\/\/www.thelocalvoice.net\/oxford\/?p=115248"},"modified":"2021-11-01T10:17:28","modified_gmt":"2021-11-01T15:17:28","slug":"chick-in-the-box-serves-hand-battered-fried-chicken-on-ole-miss-campus","status":"publish","type":"post","link":"https:\/\/www.thelocalvoice.net\/oxford\/chick-in-the-box-serves-hand-battered-fried-chicken-on-ole-miss-campus\/","title":{"rendered":"Chick in the Box Serves Hand-battered Fried Chicken on Ole Miss Campus"},"content":{"rendered":"\n<h2 class=\"wp-block-heading\">Teresa Adams opened Chick in the Box food truck this fall<\/h2>\n\n\n\n<p>After serving for fifteen years as director of <a href=\"https:\/\/theleapfrogprogram.org\" target=\"_blank\" rel=\"noreferrer noopener\">The Leap Frog Program<\/a>, a nonprofit literacy program in <strong>Oxford<\/strong>, Mississippi, <strong>Teresa Adams<\/strong> pivoted to open <a href=\"https:\/\/www.facebook.com\/Chickintheboxtruck\/\" target=\"_blank\" rel=\"noreferrer noopener\">Chick in the Box<\/a>, a new food truck at the <strong>University of Mississippi<\/strong>. The truck parks at the corner of Rebel Drive and Dormitory Row, next to <strong>Wiggly\u2019s Taco Truck<\/strong> and <strong>Hot Box Hibachi<\/strong>. I was ready for a new adventure, and my kids were older, you know? I worked in restaurants all through high school and college, and I really enjoyed that fast-paced, crazy, chaotic environment. I love the craziness and the chaos. That was my favorite part at Leap Frog was when the kids would get there and the volunteers would get there, and it would be like, \u201cI need this! She needs that! Go over here!\u201d It\u2019s like football Saturday, you know? \u201cYes, yes, okay, here! Why is your nose bleeding? Get over there! Stop touching him.\u201d I\u2019m ADD. I can\u2019t sit still.<\/p>\n\n\n\n<p><strong><em>Why a food truck?<\/em><\/strong><\/p>\n\n\n\n<p>One of my husband\u2019s best friends from college, <strong>James Dimaculangan<\/strong>, has several food trucks at <strong>Auburn<\/strong>. Last year because of COVID, he shut the Chick in the Box one down and just ran a Hibachi one because he was by himself. He has been running food trucks at Auburn for eight years, and within the last year [he asked], \u201cWould you ever wanna do this?\u201d Because he wanted to expand and see how it would work [on] other campuses. He knew that I\u2019d worked in restaurants and that I could handle it. So finally, in the spring, we started getting serious and talking to Ole Miss, but we didn\u2019t get the green light from Ole Miss until the end of June.<\/p>\n\n\n\n<p><strong><em>Chick in the Box, Wiggly\u2019s, and Hot Box Hibachi share this corner. Are these the first food trucks on campus?<\/em><\/strong><\/p>\n\n\n\n<p>Blenz Bowls is here, it\u2019s a smoothie truck. They were here last year. We\u2019ve been trying to do this on our campus.\u201d So it was also a dream she wanted to make happen. So I kind of contacted her at the right time.<\/p>\n\n\n\n<p>We got the final go-ahead in late June, then they got these other guys on board, so it made for kind of a pit stop. Thank God, these guys have been doing it for a while, and they\u2019re super nice, so I can go to them when I\u2019m having trouble with anything. We\u2019re hoping to be here for a while, hopefully for years.<\/p>\n\n\n\n<p><strong><em>How has the reception been so far?<\/em><\/strong><\/p>\n\n\n\n<p>This is a pretty busy spot because of the library, and the Union is right over there. But still, the second week, people would still walk by and say, \u201cWe have food trucks here?\u201d It\u2019s a huge campus, so unless you have class over here, you\u2019d never see it.<\/p>\n\n\n\n<p><strong><em>What are your hours, and will you be open on game weekends?<\/em><\/strong><\/p>\n\n\n\n<p>We\u2019re open 10 am \u2013 4 pm, Monday through Friday. We have to move the trucks off campus for football game Saturdays because of foot traffic. The catch is that I have a 50 amp power cord that I have to run power to. Otherwise it\u2019s a lot of extension cords, and that\u2019s no good. So I\u2019m not doing that yet because this is literally my third week in this business doing this truck, so twelve or thirteen hour days are normal.<\/p>\n\n\n\n<p><strong><em>The food is all handmade, correct?<\/em><\/strong><\/p>\n\n\n\n<p>Yes. We have homemade chicken salad, we hand-batter the chicken tenders and fry them to order, and then we have French fries and waffles that we make to order.<\/p>\n\n\n\n<p><strong><em>You have chicken and waffles? Stop it.<\/em><\/strong><\/p>\n\n\n\n<p>Yum-o.<\/p>\n\n\n\n<p><strong><em>What is your favorite aspect of this so far?<\/em><\/strong><\/p>\n\n\n\n<p>My favorite is being able to be social because I am very extroverted. Last year being home with three other people\u2014that\u2019s it\u2014all day long, every day, was not good for my mental health. I am very social. I want to talk to people. Getting to be on the truck and meeting my college kids, and working in a diverse set of people is fun to me. And I enjoy the fast pace of it, too.<\/p>\n\n\n\n<p><strong><em>What has been the most difficult?<\/em><\/strong><\/p>\n\n\n\n<p>The steep learning curve to start, because I\u2019ve never done this before. It\u2019s very different than being in a restaurant because you\u2019re on the go constantly. You know? You don\u2019t have an ice maker or [you realize] \u201cOh, I need more water.\u201d I don\u2019t have a cooler to go grab stuff from.<\/p>\n\n\n\n<p><strong><em>There\u2019s no walk-in to go cry in\u2026<\/em><\/strong><\/p>\n\n\n\n<p>No! There is not! But every day, I think, well, this happened, but that\u2019s another lesson I learned. Check.<\/p>\n\n\n\n<p><strong><em>What are your hopes for the future?<\/em><\/strong><\/p>\n\n\n\n<p>To get busier, of course. Everyone wants more business. And I\u2019m hoping that Aramark renews our contract semester-to-semester so we can stay here. Because it\u2019s a really nice situation to be on campus.&nbsp;<\/p>\n\n\n\n<p><strong><em>Are you guys on Starship?<\/em><\/strong><\/p>\n\n\n\n<p>We are.
